F2 Switches to Edit mode and places the cursor at the end of the contents of the current cell.
The addNewFromTitles() method creates named ranges from header columns or rows in a cell range.
Ctrl+F3 or Insert Names Manage opens the dialog. Select the range name from the list and click Delete button.
You cannot rename the columns themselves. The usual approach is to use the first row to show the column headings. As for which application to use, it really depends on what you want to do with the information. Calc is intended for calculations and graphing.
