One reason binary files are efficient is because they can use all 8 bits in a byte, while most text is constrained to certain fixed patterns, leaving unused space. However, by compressing your text data you can reduce the amount of space used and make text more efficient.
In ASCII representation, full expansion of a double is about 16+4 characters -depending on how you want to represent them size changes slightly- which is (at minimum) 20 bytes while in binary format it would take 8 bytes. That is more than half storage gain.
gz or . Z extension, or a variation such as . tgz or . taz, then it is a compressed (possibly tar) file, and must be treated as an unreadable (by humans, that is) binary file.
One of the advantages of binary files is that they are more efficient. In terms of memory, storing values using numeric formats such as IEEE 754, rather than as text characters, tends to use less memory. In addition, binary formats also offer advantages in terms of speed of access.
Binary files tend to be smaller and faster to interpret than text files.
A text file is processed as a sequence of characters. A binary file is processed as a sequence of bytes.
Changes in large binary files cause Git repositories to grow by the size of that file every time the file is changed (and that change is committed). That means it will take a long time to get the files. And if you do, it will be difficult to version and merge the binaries.
Zip files are not text. They are just binary.
