So yes, you are right - RAW files are duller and not as sharp as JPGs out of the camera. But thats good, as it gives you complete control when editing. RAW files also have much more information than JPGs so your ability to edit and extract information is far greater than from a JPG.
The age-old question remains Should I be shooting my images in RAW or JPEG?. The answer to that question really boils down to your end goal. If you are taking your camera out with the intent to capture high-quality imagery for printing purposes, RAW should always be your go-to.
This means that there are no additional post production settings being applied. So, what we are seeing is both files as shot directly by the camera. Notice how the zeroed RAW file is dark and lacks contrast compared to the zeroed JPEG.
Basic is the most compressed (lowest quality), Fine is the least compressed (highest quality) setting. RAW has no settings. If you want to save your image in both file formats, you can combine RAW with any kind of JPEG setting.
Many professional photographers shoot in RAW because the format captures the highest level of detail. It can often be easier to edit exposure later with a RAW file. However, shooting in JPEG has its benefits, since their smaller file sizes allow you to shoot more images at once and transfer files faster.
