Yep, bamboo cutting boards end up having variability in the engraves due to the density of the various parts of the bamboo trunk(?). I usually mask them, engrave and shoot with a coat of Minwax Polyshades Mission Oak. It creates an even dark stain with a polyurethane finish (which is food safe btw).
When looking to achieve a dark black appearance, treating wood with solutions such as water and borax or baking soda before engraving can be helpful. Other makers find that using products designed to enhance appearance after engraving is ideal.
Re: darkening engraved letters Id try clear coating the letters and adjacent areas, then fill the letters in with black paint and then sand the board back down to bare wood. The clear coat will be a barrier between the black paint and the wood and prevent the black paint from staining the wood.
Applying a chemical darkening solution specifically formulated to react with the metal surface is a third method. Once applied to the engraving and dried, the solution can be rinsed away, leaving just the darkened engraved sections. Finally, rubbing black ink or enamel paint into the engraving can provide dark accents.

To burn the bamboo to darken the laser-engraved areas, carefully hold a torch or hot iron over the engraved areas, being careful not to scorch or burn the surrounding bamboo.
You can stain or heat treat the bamboo to a darker color or change it to a completely different color. Staining can add a mixture of different colors, while heat treatment only darkens it to a mahogany or brownish color. We recommend Amteco 300 for staining or sealing your bamboo product.
