Overcome your fear of drawing dark. Use a black color pencil to draw the deepest darks. Tone down the half-tones and brighten the highlights to make darker sections of your drawing appear even darker. Gradually build up the values by layering graphite on paper. Draw with a softer pencil grade like a 2B or 4B.
One of many ways to change the color of the text is to go to: LayerLayer StyleColor Overlay. Click on the Color Chip just to the right of the Blending Mode dropdown to bring up the Color picker. Click around in your image to sample different colors and see the result on the text.

Open a solid color adjustment layer above the signature layer and select the new color. Click the color button in the Fill Sign menu and choose your desired color.
