A modern camera sensor preserves an incredible amount of information, particularly when shooting RAW and at a lower ISO. While underexposing too much can introduce unnecessary noise, dialing it down by one stop (or even two) isnt going to ruin your image.
The simple answer is UNDEREXPOSED image files in most circumstances will survive better than overexposed image files with clipped highlights.
Underexposing your images and then bringing them back up in post-processing is definitely the way to go. Sure, it might introduce a bit of grain, but the color consistency is pretty good and with noise reduction tech available in Capture One as well as the magic of Lightrooms Denoise, its barely a consideration.
Doubling or halving your shutter speed produces an increase or decrease of 1 stop of exposure. Common shutter speed stops. For example, changing from 1/100 of a second to 1/200 lets in half as much light, so we can say weve decreased the exposure by 1 stop.
Open the photo you want to edit. In the right panel, select Masking Background. docHub Camera Raw will run an analysis and automatically select the background for you. You can view the selection as an overlay (red, by default) and a mask is created in the Masks panel.
If you are shooting JPEG, then the general rule is to underexpose because if you lose the highlights in a JPEG, these highlights are simply lost, unrecoverable. If you are shooting raw, the general rule is to overexpose the image to get more light (more exposure) into the shadows.
It does not affect the raw captured. The raw image is completely independent of the iso chosen. Once I have set the aperture and the shutter speed, exposure needs no further thought.
