When an image is captured in a digital camera, it is recorded as raw data. If the camera format is set to JPEG, this raw data is processed and compressed before it is saved in the JPEG format. If the camera format is set to raw, no processing is applied, and therefore the file stores more tonal and color data.

Many professional photographers shoot in RAW because the format captures the highest level of detail. It can often be easier to edit exposure later with a RAW file. However, shooting in JPEG has its benefits, since their smaller file sizes allow you to shoot more images at once and transfer files faster.
A RAW image contains wider dynamic range and color gamut compared to a JPEG image. For highlight and shadow recovery when an image or parts of an image are underexposed or overexposed, a RAW image provides far better recovery potential compared to JPEG.
