Medium format film captures the portraits and most important work of a wedding day. 35mm film captures the candid, quick moments like a bridal party walking outside or cocktail hour. A Canon eos-3 is my 35mm camera which uses canon lenses.
If you are taking photos that you know you wont have to make many amendments to or if you need to get them finished/ready/uploaded in a hurry then shoot jpeg. If you are photographing portraits, landscapes, night/low light situations, then shoot in RAW.
Heres a list of adjectives to help you put words to what youre envisioning for your wedding photos: moody, artistic, light, airy, bright, colorful, muted, warm, clean, timeless, classic, film look, cinematic, editorial, photojournalistic, candid, posed.
Your photographer should provide high resolution JPEG images, which retain a ton of quality (more than enough to take a picture and blow it up on a highway billboard!) - which are also easier for you to store because they have smaller file sizes.
I have shot in manual mode only for prolonged stretches and I do still use it if that is the best option, but for wedding photography or anything where things can unfold quickly, I find aperture priority the best choice.
Professional photographers take pictures in whats called RAW file format. These end up being really large files that are most suitable for photo editing (because they retain a lot more image detail), but not good for much else.
My preferred setting for general wedding shots is to pick f4 or 5.6, set my minimum shutter speed to 1/125 and ISO to auto.
Do wedding photographers edit photos? They do if theyre competent. Competent photographers shoot in raw i.e. they use the unprocessed sensor data. Like an undeveloped film negative, what comes off the camera isnt intended to be used without additional processing.
