Apple Mail pulls the name information from cards in the contacts app (or iCloud Accounts, see below). If there is a card with the email address typed, it will try to use the name on that card. This can be changed by: Open Contacts.

You can view and change your computers name in the About settings window. On your Mac, choose Apple menu System Settings, click General in the sidebar, then click About on the right. (You may need to scroll down.) Type a new name in the Name field.
