Have a look at your Profiles in your Pages' print dialog and check that it isn't set to black & white. Check you have the correct Printer driver selected in Pages. It is also possible that Pages is outputting to RGB and your CMYK printer is ignoring that and giving you a greyscale version instead.
To use the color picker tool in Pages, click the color wheel beside the swatch next to Text Color and select the color sliders option. There, you'll find the color picker tool at the bottom—it looks like an eyedropper.
Change text colour If the text is in a text box, table or shape, first click the Text tab at the top of the sidebar, then click the Style button. Choose one of the following: A colour that coordinates with your template: Click the pop-up menu below the Font section, then choose Text Colour.
Select the text, then tap Copy. Note: If you want to remove the text from its original location, tap Cut instead. Tap where you want to paste the text, then tap Paste.
Any colour: Click the pop-up menu below the Font section, then choose Text Colour. Click the colour wheel, then choose a colour from one of the colour palettes. A two-colour gradient fill: Click the pop-up menu below the Font section and choose Gradient Fill. Choose two colours.

Bleed refers to an extra 1/8” (. 125 in) of image or background color that extends beyond the trim area of your printing piece. The project is printed on an oversized sheet that is then cut down to size with the appearance that the image is “bleeding” off the edge of the paper.
Open the print dialogue. Click on Copies & Pages, then click on Printer Features. Select the drop down menu labeled Feature Sets and select Color Options. Scroll down to the feature XROutput and select Color.
In Page Setup, set the page size to a custom size larger than the page you need (e.g., a few centimetres larger horizontal and vertical than the final page size). In the new page that appears, set the page guides to mark the border of the document, then set the crop and bleed marks where specified by your printer.
Under the File dropdown menu, select Save As and save your document as a PDF (choose Adobe PDF in the Format dropdown menu in the Save As dialogue box). Click Save. Then, under the Marks and Bleed tab, check the Use Document Bleed Settings box.
