A food allergy chart is a template that youll use to record which foods on your menu contain one or more of the 14 named allergens. It can be tricky to remember all of them, so having a chart is extremely useful.
It must commence with the word Contains then list the required name of each food to be declared (e.g. Contains milk). Allergens must be declared using a required name, or mandatory specified term for the allergen source (Standard 1.1. 2Definitions used throughout the Code).
In Canada, the most common allergens in food otherwise known as the priority allergens are: Eggs. Milk. Mustard. Peanuts. Crustaceans and molluscs. Fish. Sesame seeds. Soy.
Food Labels and Allergens The law requires that food labels identify the food source of all major food allergens used to make the food. This requirement is met if the common or usual name of an ingredient already identifies that allergens food source name (for example, buttermilk).
In Canada, common allergens and gluten sources must always be clearly declared on food labels when present as ingredients or components of ingredients. They will appear in the ingredient list or in a Contains statement located immediately after the ingredient list.
If the specific allergen appears in the list above, you must list it by name - for example, Contains: Wheat, Milk, Eggs. If the name of the allergen does not appear in the list above (prawns, for example), you must specify the category of allergen - for example, Contains: Crustaceans.
Develop an Allergy Statement for the Menu: An allergen statement alerts diners to the presence of allergens in the kitchen, especially the Big 8 allergens. For example, post the following in plain sight and/or on the menu: Allergy Warning: Menu items may contain or come into contact with wheat, eggs, nuts and milk.
Food businesses need to tell customers if any food they provide contain any of the listed allergens as an ingredient. Consumers may be allergic or have intolerance to other ingredients, but only the 14 allergens are required to be declared as allergens by food law.
