Most professional photography is shot in raw. This format gives the most flexibility when editing photos later. Professional photojournalists and sports photographers may shoot in JPEG when they send images directly from their camera to a news outlet. They do not have time to post-process the pictures.
It's because when you shoot in JPEG mode, your camera applies sharpening, contrast, color saturation, and all sorts of little tweaks to create a fully processed, good-looking final image.
The answer to that question really boils down to your end goal. If you are taking your camera out with the intent to capture high-quality imagery for printing purposes, RAW should always be your go-to.
What is a RAW file? A RAW file is lossless, meaning it captures uncompressed data from your camera sensor. Sometimes referred to as a digital negative, you can think of a RAW file as the raw “ingredients” of a photo that will need to be processed in order to bring out the picture's full potential.
For all the reasons touting the DNG format, perhaps the biggest reason not to convert is that there is no obvious benefit. DNG files don't contain more information (maybe less), are negligibly smaller, don't load appreciably faster, take longer to download because the must be converted, and ties you to Adobe forever!
DNG and RAW files are similar in that they are both versions of raw image files. However, DNG is stored in a format that's compatible with most editing software, and the file sizes tend to be smaller than RAW.
