Use the built-in redaction tool: Google Docs comes with a built-in tool for redacting PDFs. Open the PDF in Google Docs and click the Edit button to use it. Then, click the Redact option from the menu that appears.
Go to Google Drive. Click on the file or folder that you want to remove access from. Click on the Share button. Click on the Remove access button next to the persons name.
You decide what content is shared with whom The content you save on Google Docs, Sheets, Slides, and Vids is private to you, from others, unless you choose to share it.
To hide your name on Google Docs, edit the document using an incognito window in your browser. Alternatively, log out of your Google account before accessing the document.
Its not possible to hide the owner name on shared documents. It could be found either on the Google Documents UI or on Google Drive. The alternative is to use an account that doesnt include your name on the email address nor the display name.
If you are using a personal (free) account, you wont be able to see how often someone has opened or viewed your document. That feature is not available for personal accounts.

The username of the owner of a file can always be found, so unfortunately there is no solution to hide your username. You could try using the Blank Sheet Maker form to create a file for anonymous sharing.
