It is not illegal to alter a contract once it has been signed. However, it must be materially changed, meaning that if an important part of the contract is altered by the change, it must be made by mutual consent of both parties.

Can you amend a contract after signing it? The answer is yes, you can. If the contract has already been signed, all parties must agree to make the amendment. Joinder agreements are generally those in which individual shareholders specifically agree that they will be subject to all or certain terms of the merger agreement. These agreements may contain additional obligations that the buyer requires of major shareholders, such as voting agreements.
Should I Use a Joinder or an Amendment? Technically, joinders are not amendments to the original agreement because they typically do not make any substantive changes to the terms of the agreement itself.
Any time the relationship deviates from the original contract, you should amend the contract to reflect the actual practices of the parties. You may also need to make a change if some provision of the contract does not appear to be working as planned.
If the contract is silent on the matter, you may only make changes with the approval of the other party. Both parties must agree to the changes. Depending on the extent of changes, you may be able to simply amend the document. In this case, both parties must sign approval of the changes.
