To customize your calendar settings, click the blue menu icon and select "Settings" from the drop-down menu. Choose "Date and Time" from the left sidebar. Here, you can adjust the time zone and set the default start date for the calendar. For a conference calendar, it's best to set the start date to the specific date of the conference. Additionally, you can customize the start hour.
