Record Producer gives a non-itil user the ability to create things like an Incident, Change, basically anything but a Request from a custom front end you deliver via the Service Catalog/Portal.
An order guide submits a single service catalog request that generates several items. Order guides allow you to define rules that identify which catalog items to include in a request. This can be extremely useful in the (obvious) use case of user onboarding.

Order guide submissions are expected to be used to submit a group of compatible requested items and associate them with one request. We direct users to view the generated REQ after an order guide is submitted; however, when submitting a record producer, an REQ is not created.
A catalog item works with the cart where you can add multiple and then checkout. On the back end it creates a request, request item, and possibly approvals and tasks depending on its workflow. A record producer is ordered one at a time and creates one record on the back end, most commonly an incident.
A service catalog would use an execution plan or workflow to produce a request with associated Catalog Tasks and Requested Items (RITM). A catalog item should ideally be used when you want to generate a request, complete with workflow, tasks, approvals, and so on.
