The definition of whatever style you are using probably has the Automatically update setting turned on. With it on, any direct formatting you make (like centering or bold) will cause the style to be redefined to match. Open the Modify Style dialog and turn off the setting.
If the Bold indicator is turned on in your dialog box, then your text is going to appear as bold because thats the way that the style is defined. If this is the case, then you can click the Bold indicator (to turn it off) and then click OK. Your problem should be solved.

Select the text that you want to make bold, and do one of the following: Move your pointer to the Mini toolbar above your selection and click Bold. . Click Bold. in the Font group on the Home tab. Type the keyboard shortcut: CTRL+B.
