LaTex uses the Computer Modern typeface family by default, which includes options for serif, sans serif, and monospaced (typewriter) fonts. Documentation for changing fonts is available on the Overleaf font typefaces guide and the LaTeX 2e documentation.
To bold lowercase Greek or other symbols use the \boldsymbol command[3]; this will only work if there exists a bold version of the symbol in the current font. As a last resort there is the \pmb command[3] (poor mans bold): this prints multiple versions of the character slightly offset against each other.
What font does LaTeX use for math? In LaTeX, the default font used for math mode is typically Computer Modern. However, you can also use different fonts by specifying them in your LaTeX document preamble using packages.
The popular LaTeX font typefaces are originated from four families: Computer Modern (default in standard LaTeX classes): CM Roman, CM Sans Serif, CM Typewriter. Latin Modern: LM Roman, LM Sans Serif, LM Typewriter, LM Dunhill. Post Script Fonts: Times, Utopia/Fourier, Palatino, Bookman, Helvetica, Courier.

Noto Sans Math is a font that contains symbols for mathematical notation.
The \boldmath declaration switches to a bold math italic font; this causes letters, numbers, and most symbols used in math mode to be set in a bold type. (In LaTeX2e everything in the formula is set in a bold font.)
The Mathcal template is intended to simulate a calligraphic font for use in mathematical formulas using standard HTML. Use this template as an alternative to \mathcal{} in LaTeX markup (see Help:Displaying a formula).
