you can change the background to dark either dark gray or black click on file click on office account office theme drop down you can select dark gray or black you can see the background is changed keep in mind you are changing the theme for all microsoft 365 desktop applications try to open microsoft word you can see word is also changed to dark mode now open an email if you want the message window to be white you can use the sun icon which will change message window to white background and the icon turned to moon you can use it as toggle between white and dark mode when sending a new email also you can change the message window background by clicking on the switch background button in the ribbon if you want to disable the dark mode for message window and keep it as white always click on file click on options in general tab keep the office theme to black but select the check box never change the message background color click on ok to save the setting now open an email you can see the
