I would usually rev to around 1500 rpm a little before the clutch begins to grab. As I am at around 1500rpm, I would slowly let the clutch out till the catching point. The rpms will naturally drop and I would slowly give it a little more gas while releasing the clutch till it is completely out.
No. Its good for the transmission. Rev-matching brings the engine RPMs to the proper level for the speed and gear selection as the rider slows down the bike by downshifting.
The transmission will be going much faster than the engine and so the engine, when the gear is engaged, will rev and exceed the redline. This will cause the vehicle to feel like its hit a brick wall with engine braking and is the main way revving to redline can cause engine damage.
Normally the best place to shift is just below the red line it depends on the torque curve of the engine. Torque always falls off at the end in some cars quite drastically.
