You can disable the date and name by going to Account tab-Account settings-Signature Preferences and uncheck Well formatted Signature.
Go to File Save as Other Optimized PDF From this screen, you can select all items (metadata) you want to be removed from the file. In the Settings drop down menu select the Custom option.
Portable Document Format (PDF) is a common format for sharing final versions of files. To add or edit text in a PDF that was made in an Office program like Excel or Publisher, start with the original Office file. Open that file in your Office program, make your changes, and then save the file in PDF format again.

How to create fillable PDF files: Open Acrobat: Click on the Tools tab and select Prepare Form. Select a file or scan a document: Acrobat will automatically analyze your document and add form fields.
