To change the starting value of a caption number in Word, we toggle the field codes by pressing the keyboard shortcut ALT+F9. Then we click in front of the closing curly bracket and now we type in the numbering restart switch \r - then a space - and then the number that we want our caption to start with. Afterwards, we toggle the field codes back again with ALT+F9 and we quickly switch to the print preview which will update all the field codes. As you can see, the caption will now start with the number that we specified, and all following caption numbers will be incremented as usual. Just make sure that the following caption numbers dont contain the restart switch or otherwise they will all have the same number.
