A food allergy is a medical condition characterized by an abnormal immune response to certain foods. The most common allergens are known as the "big eight," which include proteins found in milk, eggs, peanuts, tree nuts, seafood, shellfish, soy, and wheat. Typically, food does not provoke an allergic reaction due to a process called oral tolerance. In this process, food proteins are broken down by gastric acid and proteases into oligopeptides—small amino acid chains—while traveling through the stomach and intestines. These oligopeptides then interact with Peyer's patches, a type of tissue along the intestinal wall containing M cells.
