An average check per cover (APC) is calculated as the following: Total number of sales / total number of customers.
Another way of looking at this would be to use a capture ratio, which is simply a % of the total number of hotel guests that eat on-site. Lets say on Sunday, the house count is 100, and in the past, you served 60 covers. Your capture ratio on Sunday is 60%.
Food capture rates are the amount of customers who buy food with their coffees. Medio/Massimo mix is the amount of people who select a Medium or Large beverage compared to a small.
Restaurant reservations are an arrangement guests make in advance to confirm a table for their party at a specified time. Making a reservation at a restaurant can be done by phone, through a restaurants website, third-party reservation sites or apps, at the restaurant in person, or even with a text message.
Typically, the most you will fit is 1 person for every 10 ft of dining space. From here, we see that using much smaller tables and keeping spacious traffic areas, youll be able to fit up to 133 people. With large banquet style seating, you could potentially fit up to 240 people.
Polansky and McCool propose a capture ratio, given by the ratio of Meal Period Covers Served divided by the Number of Persons Available to Eat that Meal. This is another statistic which can be used to calculate the allocation of staff, based on the number of predicted covers required.
Seat occupancy is calculated using similar formula: Consider the same 50-table restaurant and assume that the total number of seats among those 50 tables is 100. From 19:00 to 20:00, 60 seats are occupied among the 40 occupied tables. Seat occupancy therefore equals 60 X 1 / 100 X 1 = 60/100 = 60%.
The breakfast capture rate is the indicator that divides the total number of breakfasts served by the total number of overnight stays over the same period.
