Simply select the payees you want to merge and click Merge Payees. The merge payee window will appear where you can decide the final payee name. This name will be reflected in all the transactions with which the merged payees are associated.
Choose Tools menu Memorized Payee List. Select the payee to edit.
Go to Edit Preferences Data entry and QuickFill. There you will see the option Automatically memorize new Payees. If you check that box, Quicken will add new Payees and the Category you assign them to the Memorized Payee List (MPL). Then when it see that Payee again, it will use the same Category.
Edit a memorized payee Choose Tools menu Memorized Payee List. Select the payee that you want to change. Click Edit. Make the changes you want in any field. Select the Mark as cleared check box if you want to automatically mark this transaction with a cleared status.
Choose Tools menu Memorized Payee List. Find the transaction you want to lock. Click in the Lock column of the transaction. If you dont see the Lock column, choose Options Show Locked status column in list.
Right-click the transaction with the payee you want to change. Select Edit Transaction and enter the new payee name. Check the Also rename option box.
On your 2nd question - yes, you can change your settings by going to Edit Preferences Data entry and QuickFill then check the boxes for Automatically memorize new payees and Automatically include in Calendar Payee List.
To open the Account List, choose Tools menu Account List. The Account List shows the accounts in the current file. Accounts are grouped by primary use, such as Personal Banking or Personal Investments.
